Does anyone have recommendations for a Ryokan in close proximity to the Monkey Park? I'm having a heck of a time trying to find one through Japan guest houses website that will accept solo travellers

Shibu Onsen is the closest town:

There are lots of ryokan in the town. The closest is Korakukan right at the base of the park, but its pretty old. Some of the others are much nicer looking and not much farther away. This guide has some english info, although the guy that ran it is no longer in Japan and I'm not sure they still arrange bookings through the site:

The Shibu hotel doesn't charge for a second person if you book one of the 2 non Japanese rooms, but the Japanese rooms are per person so I saved half the price by booking non Japanese as you still get to enjoy the onsen experience. I booked today for March 5 and got a western room. My biggest hassle has been transport as catching JR Train on a weekday, however many reviews said Shibu hotel will give you a lift.
