Just a quick question.
If I book a ticket in advance (or buy on the day) from Unazuki to Keyakidaira is it possible to get off at Kuronagi and Kanetsuri stations and wait for the next train?
Or is it reserved in such a way that you have to stick with your train?
If it is how would you go about buying tickets? Would you buy a new one for each leg?

You have to buy a separate ticket for each leg of your journey. Stop-overs on a single ticket are not possible.

So if I didn't know how long I was going to be at a stop it wouldn't make sense to book in advance?

No, if you get off before the end destination of your ticket, the ticket will become invalid and you cannot use it for the rest of the journey anymore.
I recommend to research in advance which places along the route you want to see and then buy the tickets accordingly.
