What are the chances of my partner (who is 35yrs) getting work in Japan while I teach English? Eg. At a bar

Working at bars and other nightlife businesses is highly regulated, and typically possible only for spouses of Japanese nationals or of permanent residents (as well as Japanese nationals and permanent residents themselves, of course).

But most other work will be possible if your husband can obtain a dependent visa and a work permit ("permission to engage in activities other than [...]"). Of course, he can also get a work visa himself, if he meets the requirements.

Actually, you said "partner". If you are not married, then you can't sponsor him for a dependent visa, so he will have to get his own visa, which will have nothing to do with you.
