day 1-narita airport to tokyo
The Narita Express train and JR Sobu Line are covered, but whether the entire trip is covered depends on where in Tokyo you will be heading.
day 2-tokyo to hakone
The pass covers trains as far as Odawara, but transportation inside Hakone is not covered.
Everything else is covered if you use JR trains as opposed to non-JR options that are available on some of the sections.

Yes 7 days Japan Rail Pass is worth it for this case. However you will miss Day 7 if you activate on Day 1. Then buy regular Narita Express on the return or You can opt to get regular Narita Express on Day 1 and activate Rail pass on Day 2-8.
Either way you will need to buy regular Narita Express
Hope this help!
Have Fun!!

as mentioned above you would be better off activating on day 2, as the trip from narita to Tokyo is far cheaper than the return.
