Hello,
I'm going to travel to Japan at the end of March. I know that I have to make a seat reservation for the Narita express and that it's possible to make seat reservations for some other trains too. But I wonder if there are any more trains for which I MUST make a seat reservation. I will go to Tokyo - Kyoto - Hiroshima - Osaka - Tokyo. Can you help me, please?

No, the major lines on your itinerary do not require seat reservations. They are recommended (and free) however, if you will be traveling on a Japan Rail Pass.

If you're going during peak season aka cherry blossom viewing season, I'd recommend making seat reservations.
Aside from that, from my experience, if I'm traveling on a weekday after morning rush hour, I usually don't make any reservations. If you're traveling on the weekends, you may want to reserve a seat as they can be crowded.
