im interested to see the autumn colors of Korankei this Nov.
Is it likely to be crowded on a Sat? or is considered a off-peak week already?
is it better to go on weekdays?

Do you mean 28th Nov?
If I were you, I would avoid weekend. If you are taking public transport, try to depart early
