One day JR Pass trip from and to Tokyo

I'm travelling around Japan at the end of December with a friend. He is leaving from Tokyo on the morning of the 1 January but I will still have another week there. I will have 1 day of JR Pass validity left.
Can anyone suggest a nice day trip to do on the 1st with my pass. Possibly going to somewhere with an onsen or just nice journeys all day with good views?
It should start in Tokyo but it could end somewhere close by instead of right in Tokyo as I haven't booked anywhere to stay for the night of the 1st yet.

You can take the Azusa Limited Express on the JR Chuo liine out to Matsumoto at the foot of the Japan Alps. It takes 3 hours. Also at Matsumoto is one of only 12 original castles. It is also black and with a nice most surrounding it. The inside is very well kept. We always went somewhere on Jan. 1 and the weather was crystal clear. Ask for seat D. That will be on the Alps side of the train.

Onsen... makes it Nagano, Takayama, and Karuizawa. All has nice food, nice views, and hot springs.
Kusatsu is also famous and is atmospheric though it does not have nice nature views.
You can stay a night or two. Maybe visit something along the train line nearby. Then get a Tokyo Wide Pass and go to elsewhere like Nikko or something? It is 3 days worth so it would work well. Remember to only activate it when you leave the location.

Thanks both. I think I'm going to go for the Matsumoto castle trip - there is an onsen town nearby by bus (Asama) so I get the nice views on a train, something interesting to do, an onsen and then back to Tokyo late at night.
