Hi, Im just wondering am i able to buy a one-way ticket from Tokyo on the Hayabusa, Hakucho and hokuto all under the 1 ticket from tokyo from the ticketing office. Such that i do not need to purchase a new ticket at for example Shin-aomori.
As well as that, if i plan to reserve seats on the JR East Reservation service without using any pass (JR rail pass) can 1 person collect and pay for 5 tickets.
Thanks in advance !

Yes, you can.
Note that from March 26, 2016, the shinkansen will be extended as far as Hakodate. So, only one transfer will be required.

No, as long as it is all JR, then you can buy the entire ticket at a JR ticket counter.
As well as that, if i plan to reserve seats on the JR East Reservation service without using any pass (JR rail pass) can 1 person collect and pay for 5 tickets.
The website allows for reservations as far as Shin-Aomori but not beyond. Note that your tickets for the limited express trains will be discounted if you buy them at the same time as the shinkansen ticket. This could be a reason why not to use the reservation site in this particular case. But if you travel during a very busy season, it may be worth paying a little more for peace of mind.

As for the actual answer to your latter question: yes, a single person can pick up a single order of five tickets.

Just as an advisory before everyone gets too excited about the shinkansen extension to Hokkaido (which is a great addition and will eventually go to Sapporo in 2030), the new terminal will be at a station called Shin-Hokodate and is actually looks quite a long way from Hakodate (18km).
It is unclear if there will be a train running from the terminal directly (without transfers) to Sapporo as the initial plan looks to have "shuttle trains" operate between the two main lines. So, more transfers.
