If I want to ride Ltd. Exp. or Shinkansen trains without reserving seats can I just show the pass to the station master? And inside the train should I show it again?

Yes, although it does not have to be the station master. Showing it to the station staff at the manned ticket gate will be sufficient.
And inside the train should I show it again?
Yes.
