Hi. I have been searching for wild caught fish in Japan.
Is it true that at the supermarket only those with stickers 天然 is wild caught? How about 生時?

Yes,天然(ten-nen) means wildcaught.

That is not 生時 "生 (of) 時鮭".
生(nama) means raw.
時鮭(時不知/toki-sirazu) means out of main season salmon.
時 means "time" but in this case "main season(旬/syun)" Autumn Sep-Nov.
不 means "not"
知 means "know"
So this salmon is Spring - early Summer season caught one just seasonal name. (not different as species).
(above pack pic sticker 季節限定/kisetu-gentei means "seasonal" also 鮮/sen means "fresh")
This ones are different taste against main season ones (calling 秋鮭/aki-zake,アキアジ/aki-aji)

by fat body with oily(脂/abura) like "霜降り(simo-furi)" of meat very good taste.

However really super good taste salmon is "鮭児(kei-ji)"
young 白鮭/シロザケ/shiro-zake caught in Autumn very rare most expensive one.

時鮭,秋鮭 also 鮭児 are belonging same species just different name using.
But in Japan food culture not only eating シロザケ
2nd pic 銀鮭/銀ざけ(gin-zale) are farmed one mainly bc cannot wildcaught in Japan sea/rivers/lakes
also 紅鮭(beni-sake/-jake) only import one from Russia/Alaska/Canada mainly.
So Japanese eating bellow three species mainly.
白: White
銀: Silver
紅: Red (=赤/aka)

Hi. Thanks for taking time to share and posting all the lovely photos :))
I am still not quite sure, so is 生時鮭 天然魚, is it wild caught?
How about salmon from USA, Canada and Russia, are they also wild caught?
