I suppose it depends on the season youfre going in (autumn, cherry blossom season, summerc), but Ifd go for one or two nights at an onsen - which would also give you traditional food. I havenft been to Ginzan onsen, but it looks like a great place to visit. Coupled with that would be a suggestion to visit Yamadera.
Or you could go futher north to Hachimantai. It looks great there in autumn, and you can go for lovely walks. One again, this is something I would couple with a stay at a ryokan with onsen. Therefs a nice walk you can do at Goshogake onsen in the ehell valleyf or you could stay at Tsurunoyu onsen which was also wonderful but I, think, different than an onsen town as therefs really nothing else nearby.

If you go in May, you might try Kakunodate, there will be some nice cherry blossoms if you are in luck. I also recommend Matsushima (near Sendai), and Hiraizumi (between Sendai and Morioka).
If you want some nature, you can train Shirakami Sanchi, by the Japan Sea, Dewa Sanzan, or the Sanriku coast. However there are not so much public transport in these areas.
As you are interested in food, you really should try gyutan in Sendai, jajamen (noodles) in Morioka and Yonezawa beef (it tastes like Kobe beef).

I forgot in my previous message, but Shiogama, which is very close to Sendai and Matsushima, is known for its high number of sushi restaurants and its fish market, you should try this ! There are boat tours between Matsushima and Shiogama, it is very beautiful.

Ride the Akita Nairiku line; preferably buy a day pass and make some stops along the way.
