I understand that the host of gassho-zukuri speaks only Japanese. If I don't speak Japanese and want to stay overnight, how do we communicate? Or do they only accept Japanese speaking guests?

You may book your stay via this website call Japanese guest house (http://www.japaneseguesthouses.com/index.htm) they will be able to assist you :)

Most of the hosts are likely to know the basic words necessary for basic explanations in English. Furthermore, communication can be enhanced by gestures and possibly a Japanese phrasebook.

No, guests without Japanese language knowledge are also accepted.
