Hiking in November

Hello Folks
I'm considering a fortnight in Japan in the 2nd half of November. What would the country by like weather-wise for hiking? I'm thinking especially about central Honshu and Kyushu. Are amenities open all year around in, for example, The Alps?
Also any tips for vegetarians would be great.

The higher mountains will be snow covered, especially the Alps, but possibly also the higher peaks of Kyushu. But lower mountains on both Honshu and Kyushu will be snow free and may still offer autumn colors, and can provide nice hiking opportunities.
There won't be any amenities in the higher elevations. You would have to be equipped for winter conditions.
Also any tips for vegetarians would be great.
This forum has dozens of threads about vegetarians in Japan. I recommend to try some searches on the specific issue you are interested.
