If we plan to visit Tokyo and Sapporo by JR (Tohoku...hayate, etc) and Kokkaido JR for 7 days lasting. What is different from ordinary car from green car? Is it availble for these routes we will take?

Business class on the airplane is to Green car on Shinkansen what Economy class is to Ordinary car.
