Random question: if I was getting a coffee in Japan and I didnft want cream on top could I just say ekurimu janaif or is that completely wrong?

It's a bit wrong. "kuriimu iranai" or "no kuriimu" is enough. "kuriimu irimasen" is good.

"kuriimu janai" means "it's not cream." You can say "kurrimu nashi de (onegai shimasu)" = "no cream (please)."
