Hi, can anyone tell me where I can find a traditional Miso making class, taught in English and or other fermentation methods also, (Tempeh, Amazake, Natto)?
I'm interested in the cultures and the traditional utensils.

Is there an area/region where I may find these kinds of traditional food preparation methods still being practised and taught? hopefully in English.

I'd also like to drink some quality Matcha.

I'll fly into Tokyo, so closer to there would be better but if someone knows somewhere that is exceptional I'm happy to travel.

I cant help with that but if no-one else can help, get a j-drama called Osen (it is English subbed and available on the web) which has traditional miso making in the second ep. It is a great show especially if you like traditional Japanese food http://wiki.d-addicts.com/Osen

haro1210. Thanks for the info. Unfortunately I'll be coming Oct/Nov. It makes sense that the classes are around that time as winter is the best time. I was hoping that there might be something earlier.
I'll keep it in mind though.

Bacteria is likely to breed, in many cases, making miso is likely to be carried out from January to February.
