Just wondering what are the criterias that determine whether I should use お or ご prefix?
I am guessing words with 音読み takes ご while 訓読み takes お?
If that's the case, so 販売する will be ご販売する?...

You can say with 販売する.
However お販売する and ご販売する can not say.
お売りする is possible to say.

Unfortunately, it's not so clear.
お弁当 and お電話 are 音読み but with お.
ご販売する sounds a bit funny, but you can say そちらでご販売になっている商品について...
お販売 sounds wrong.
