Are you cooking Gyusuji Nikomi or ODEN?
I'm guessing, it's "suji" not "suji" and if so, it's beef tendon. The rubbery beef bits often in ODEN on skewers.

Suiji/吸い地(吸地) is dashi(stock) soup.
This 地 means "base" = essence of taste.
