In Japan, Uncle Tetsu only seems to have a shop in Fukuoka which is very far from Tokyo, but they seem very eager to do business internationally. So why not contact them through their contact form?

Rikuro only has shops in Osaka area, but they do deliver to Tokyo. Why not ask your hotel for assistance?

Your hotel also may have other recommendations on cheesecakes in Tokyo. Just ask.

In Tokyo, Tops were delicious. (Although chocolate cake is more famous)

Shirohage is also famous.

Both are rare(No-bake) cheesecakes, so the type is slightly different.
Rutao has a shop at Haneda Airport, but the period of sale in Tokyo is limited.

What you want might be close to souffle cheesecake.
The Ginza Cozy Corner is reasonably priced.
For hall cakes, reservation is required 5 days in advance.

If cut cake or small size, reservation is unnecessary.

I think "Bake" is the most famous cheesecake in Tokyo. :) http://bakecheesetart.com/index_en.html

I forgot to write.
If it is cheese tart, PABLO is also famous.
It is in Omotesando, Shinjuku and Akihabara.

The head office is in Osaka.
