Hiking During Mid December?

Hi I'm an experienced hiker and love to do walking trails. I have travelled to Japan once before during Spring and completed the Kumano Kodo, the Nakasendo Trail and the Kibune-Kurama Onsen trail.
Are there any trails that you would recommend that would be appropriate during December? Any overnight trails that passes through an onsen or a minshuku/ryokan would be awesome. But day trails are okay too, if anything.
