We are wondering how to get from Shibuya station to Kawaguchiko station? Train/bus end of May/June 2018. Tried booking a train ticket but it was unavailable?

No need to book that far out. Just go to Shinjuku and buy a ticket for the JR train to Otsuki and onece you're there, get a Fujikyu Railway ticket to Kawaguchiko.
