Suggestions for a trip outside of Osaka

We like to surprise and take my mother in law to a short trip (for 2 days) for her birthday. We were thinking somewhere around nature and hot spring. We are located in hyogo and prefer somewhere not too far ( max 1+ hour away from Osaka)
It will be me, my husband, our 14 month old child and 66 year old mother in law.
We will probably stay in ryokan so it will be great to hear some suggestions which one to stay at.
Can you also recommend some activities for us? We donft really know what she likes apart from nature and hot springs.
