I am an IT major and hoping to move to Japan one day, so I was curious if it would be beneficial to finding a job if I got a minor in Japanese, or if that means nothing next to the Japanese test that I must take.

In Japan the qualification they are looking for is JLPT. if taking a minor in Japanese brings you to JLPT N2 or you achieve this in an other way, I think is secondary.
Generally speaking in order to work in a Japanese speaking environment youfll need at least N2, better N1. For English speaking environments I guess no JLPT is required but for daily life N3 will be a reasonable level. Obviously there are foreigners in Japan living with 0 Japanese knowledge so it is possible.
