Hello,
I'm wondering how rice paddy fields retain water. I have several ideas, but they all seems to be wrong in different ways. And when I try to google it, I keep getting just all kinds of environmental articles...

Edges of paddies are raised to create a "dam", and water is poured in and replenished as needed.

There is a program called Japanology Plus that is pretty informative, have a look on youtube as they have one about Rice. I can remember watching it a few years ago.

Some evaporates, some drains naturally. The cure in both cases is add more water. Near harvest time the water is not replensihed and that allows the harvesting machines onto the fields - it's still pretty soft (even to walk) on at that stage.
