Going north from Kyoto

Hi Friends!
I'd love some advice.
I lived in Japan from 91-93. I was in Kyoto, right downtown. I've been back a couple of times for business, on my own, but now am finally taking my family. My wife, and 3 sons will be in Japan from Sept 26-Oct 9th. So we will have 12 full days in Japan. The first 3 nights in Tokyo with many side trips. Then 5 nights in Kyoto - my old stomping ground. I have 4 more nights that I've kept open on purpose.
We will have Green Rail passes. Most of this is for me, as I"m very very tall :). We would like to go north. My kids are great travelers and will do great on the train. We WANT to go see as much as we can. An 8 hour train ride won't bother us. What recommendations do you have going north from Kyoto. Is there a small town you had a great experience in?
Hokkaido may be a stretch :) but any ideas in Tohoku? Mountain regions? Small towns? Ryokan suggestions? AirBnBs? Thank you in advance for your time!

Hi You're planning 3 nights in Tokyo with many side trips, so what will you see in Tokyo if all these days are dedicated to the many side trips?
A more logical trip in my opinion would be 4-5 days in Tokyo with 1 or 2 side trips, perhaps an overnight of 1-2 nights in a ryokan in Hakone or Kawaguchiko, or 2 nights in Kanazawa/Takayama, or Nagoya depending on your kids interests and 5 nights in Kyoto with side trips.
There is also the option of going to Hiroshima and Miyajima and staying 1-2 nights in either of them.

So you will be in Kyoto with JR Green pass, with your family and 4 nights to go. Well I envy you. I don't think many people will agree with me, but I would like to propose an ambitious itinerary including Takayama, Shirakawago, Toyama, Tateyama Kurobe Alpine route, Niigata and Kakunodate.
Day 1 Hikari Shinkansen to Nagoya and then take Wide View Hida to Takayama. You will enjoy the scenery from the front window of the limited express train. Explore Takayama.
Day 2 Bus to Shirakawago, and then Kanazawa. If time permits see some Kanazawa places. Short Shinkansen ride to Toyama.
Day 3 If the weather is fine, go to Murodo (highest place in the Alpine route). Go back to Toyama and then proceed to Niigata (about 3 hrs Train rides). If the weather is not good, they you can go to Nagano or Karuizawa which are nice places.
Day 4 Limited Express Inaho to Akita. The green seats in Inaho is very unique, which are separated by partition. Akita Shinkansen to Kakunodate (historical town).
Day 5 Explore Kakunodate. Shinkansen back to Tokyo.
