(1) how do you read 鶏煮. not in my dictionaries.
(2) how do the japanese read the "&". is it read with the usual japanese ”と” or do they say "ando"

(1) I'd say "tori-ni," short for chicken ("tori" = "niwatori") cooked dish ("ni-mono").

(2) Probably it is part of proper nouns (like shop or restaurant names)? It would be "ando."

(2) I, personally and in the languages I know, pronounce it using the word of the language which means "and" of English. If it's foreign language word in katakana which I don't know, I read it "アンド" or "と" according to my feeling of the moment. In all countries where this sign is used, they pronounce it using their own equivalent word of English "and", don't they?
In computer programming field in Japan, they very likely read it "アンパサンド amperseand". My son does so.
