I am struggling to book accommodation for the quarter final period in Oita. I have booked accommodation elsewhere through booking.com or airbnb, but both have nothing for the dates in question in Oita. Does this mean everything is sold out already? Or do the hotels not release rooms until later on?

From Booking.com, some hotels in Oita are opening bookings for Sep 2019 and not Oct 2019. Try again the next month or a few months down the road
