Hi,
We're planning to go to Tokyo from Osaka on Jan 3rd and heard it's going to be super crowded. If we're able to reserve seats a month in advance using the Smart-Ex app, will it still be crowded in the car that has reserve seating only? I read that during these times, they sell standing tickets. Do people with these tickets stand in the non-reserve cars or all cars that's available. Thanks!

Standing tickets are only sold for all-reserved Shinkansen, so not on the Tokaido. Normally, only people with a booked seat in a reserved car go into that car.

Travelers with non-reserved seating ticket will stand in the non-reserved seating cars if there is no seats available. They cannot stand in the reserve seating cars.
