I like your itinerary, i follow a similar itinerary when i arrive in Japan going to Hokkaido back to Tokyo, this was in March 2019.

Small change, i am following the cities/ towns on the way up with a straight shot down with no spots to Sendai.

I'd suggest Noboribetsu Onsen in the Hokkaido leg, and Kakunodate in the Tohoku leg. But yes, otherwise looks doable as a slow pace trip. Enjoy!
