Not to beat around the bush, I am getting divorced soon and I am in love with another woman that wants me to marry her instead.

I have a spouse visa, im a father and i have a great job. Immigration lawyer said i can stay in japan until visa expires (next april)

If i want to remarry, i am in japan so would this be change of residence status i apply for , or do i have to go to my country for coe and come back?

divorce and remarry in Japan.
No need to go back to your country and apply for CoE.

Just inform immigration accordingly after your divorce and you home country (if you informed your home country)

Your new wife must sponsor your visa. After divorce on spouse visa, immigration gives you 6 months times to change the visa to other category. Spouse visa holder cannot stay in Japan till your spouse visa expiry. You can only get 3 to 6 months time to change the category. If someone has 3 years spouse visa, if there is divorce after 1 year, you cannot stay remaining 2 years till spose visa expires as per my knowledge. Please correct me if someone know more better.
