hello,
sadly hyperdia is not the same as it was.
where can i check routes/times/platforms now? where can i make train reservations online?

Railway company website. Too many to list. Google the company you wanna travel with and go from there.

Google maps is a good starting point. Railway platform, just look at the station, sometimes google maps also tells you the platform tickets, just purchase at the station and get an IC card for shorter travels

You can literally just use google to type in the station names of where you are and want to go and it will show you which stations and which trains to take. It's honestly very simple to do.
