Hi there! I'm planning to cook Shishamo fish for my family. I do not wish to batter in flour and fry it but instead, pan-fry/grill.
Any recepies or knowhow? What kind of seasoning do I need?

Just grill them for a few minutes. I think they usually do not need any seasoning thanks in part to the tasty eggs in the fish's stomach.

Using cooking paper and placing under fish makes it easier to turn shishamo. Over heating can cause eggs to explode so I guess medium is ok.

If you're talking about the typical half-dried shishamo, they will be heated in no time.
The easiest way for me is to lightly wrap it in aluminum foil and heat it for less than 5 minutes in an oven toaster. This way, all your cooking utensils will remain clean!
