do i speak japanese to the waiters when i enter? should i say idataki masu? or will i sound like an idiot

In the USA?

Considering the fact that many overseas Japanese restaurants aren't really Japanese, or not operated by Japanese, or if they were they usually employ local staff you might end up looking like an idiot.

Yeah I think you might look like an idiot, hehe. Even in Japan, most customers hardly say "Itadakimasu"...
