I am considering travelling from Tokyo to Sapporo for the Sapporo snow festival via JR train. Would it be very difficult to get train seats during that period? Thinking of going up on 5th Feb and returning to Tokyo on 10th Feb.

No, it should not be very difficult, especially not if you reserve a few days in advance.
