"old quarter" in Kyoto?

I wonder if in Kyoto there is a particular area that is most like old Japan and less like a city? ie; Barrio Santa Cruz in Sevilla Spain... I may stay at Matsui Honkan since want reasonably priced ryokan but know nothing about it or the area.

Due to the 1923 earthquake, 1945 air raids and post-war economic boom, few buildings date back more than 100 years in Tokyo. Older buildings and building blocks can be found here and there across Tokyo, especially in the shitamachi area, for example around Yanaka and Asakusa.
