You could say:
- Tanoshii natsu wo!
- Tanoshii natsu wo o-sugoshi kudasai.

Both mean "Have an enjoyable summer!" and the first one is informal, the second one is in polite speech. Also if you are going to say this to students or teachers (people who have a long summer break) you could use the word "natsu yasumi" (summer vacation) instead of just saying "natsu" (summer) as well.
