Hi there, I plan to marry my fiance within the next few months, however due to us working too much it will be really difficult for us to both get down to the Japanese embassy in order to sign the certificate of no impediment stuff, in short, can I do my part by myself, while she goes on another date?
I'd be really grateful for any information and, or advice on this whole marriage business,

yes as far as i know if you have the papers filled out she can turn them in on her own

In my case, I got a Certificate of No Impediment from Birth, Deaths and Marriages in my country. We got married at the Yakuba (Local Government Office) on the spot.
