Out of uni, looking at language schools

So, like the title says, I'm graduating from university this year, and I'm looking to take a year to bone up on my Japanese to get to fluency before applying to grad school or preparing for the State Department Foreign Service exam (still haven't decided which yet).
Right now, I'm wrapping up my IUC application for the 10-month program, and I think I can probably get in, but it seems somewhat steep, and I was planning to do a research project with some anthropology professors at my (soon to be) alma mater while I was there, which the IUC says would not be feasible.
So, I've been looking around at some other schools, and I wanted to get some input from people here about which ones might be best.
There's just a couple of things I'm looking for. First, I'd like the student body to be around my age and not all Asian (just because I've heard Westerners can get left in the dust in programs where most students are Chinese or Korean). Second, my project is a sort of ethnography about indie & alternative rock culture in Japan compared to America, and so I'd ideally like to be in the Kanto area.
I've been searching here and elsewhere and found a few suggestions, but I want to hear what you guys have to say.

I'm looking to do a program that's through a university, so I'm also applying to the programs that Waseda and Sophia have. If anyone has experience with their programs or knows of any similar programs, don't hesitate to tell me.
