Are food stands (yatai)s safe? Should I bring stomach tablets?

I think they're pretty safe, I've eaten at them dozens of times and have never had any issues.

Japan is a wealthy, developed country. The warnings you see in guide books not to eat at street stalls are for countries like Thailand and India where hygiene standards may not be as high.
I can't guarantee you won't have stomach problems while in Japan, but I never have, and I'm usually the first to have stomach trouble when I go overseas.

In Fukuoka and many other cities, they have permissions of public health center (and police). The public health center doesn't allow them to provide raw foods. So we can't eat sashimi but can eat tenpura at yatai.

Date Palm,
Unless you are very sensitive I would say that you are safe. I have never had a problem eating from any yatai.
I have gotten sick right here in NYC but never in Japan.
Besides, eating a little of this or a little of that while strolling down a street or attending one of the many street fairs you may find is part of the fun.

I've ate at food stands many times with no problems but I've been warned by my Japanese in-laws to stay away from food stands due to poor hygiene. Maybe they were refering to my poor hygiene.
