Hi,

Could someone recommend me a good Japanese cookbook? I'm looking for basic stuff, basically, making dashi 101 type of a deal...

Try "Cooking with Dog" on Youtube. Great stuff!

I just went to my local library and came back with these 3: "The Japanese Kitchen" by Hiroko Shimbo, "The Chopstic Diet" by Kimiko Barber, "Sushi-taste and technique" by Kimiko Barber and Hiroki Takemura. I personally like the first one.

Yup, I love "Cooking with the Dog", too.:)

While you're waiting for your cookbooks to arrive, I'd suggest glancing through Just Hungry -- www.justhungry.com.

It's run by a Japanese expat (although she's currently in Japan) and there are recipes and cooking ideas. She goes through dashi (how to make it vegetarian or regular), how to cook and clean rice, making miso, plus other ideas.
