During my Japan trip I tasted a "dessert" simply made of ice and melon juice. I wonder if this has a name?

It's called kakigori. Shaved ice rather than cracked ice I think you mean?

Hawaiian shave ice is made by the commercial machines imported from Japan. They make very fine shave ice from a ice block, not like sand grain ice you usually get in US. You can buy a plastic hand crank machine (to use with the regular ice from your ice tray). You can also buy the syrup at a Japanese market or make your own & sprinkle some powdered sugar. Also good with ice cream/condensed canned milk. I have one and make shave ice on a hot day in the summer for my family to cool off quickly.
