Don't know about Hamanasu but there is usually a trolley service on the others. If in doubt there ia always an excellent selection available at all big stations. Even a very small station will probably have something to go.

Yes, food is allowed on the shinkansens. There are actually special lunch boxes you can buy on the platform that are supposed to be eaten on the trains, but you can also bring snacks like chips and sandwiches with you if you like.
The etiquette in Japan is not to bring food onto the train that can be smelled by other passengers- this usually means hot food. Otherwise, anything is fine.

Eating/drinking on train is a Japanese tradition. A food/snack cart sales will come by bowing many times for coffee, tea, bento boxes, snacks, beer, sake, mikan fruit, etc.(cash only) on the long haul LEX including shinkansen. They might even have vending machines for soft drinks, etc. But buying on the platform or nearby kiosk will have better selections and cheaper. But making mess, spilling, and leaving the discarded trash are not. Make sure to put the trash in the designated bin by the door as soon as you finish or on the way out leaving the seating area as clean as before you.

Eating/drinking on train is a Japanese tradition.
Only for travelling long distance on express trains such as Shinkansen. It does not apply to commuter trains, for example.
