JR 7 Days would be enough if you activate its usage on the day you traveling to Tokyo, Kyoto-Tokyo. That way, the 7th day will be the day for your Sapporo-Tokyo, do be careful on the expiry time for JR pass.
Do also be aware that Tokyo to Aomori is around 240min with Shinkansen Hayate or Komachi (both require reservation which you can do at the ticket office).
The trip from Aomori to Sapporo is around 350min with ideal connection. And Sapporo to Tokyo with most ideal connection starting at 7:30 am is 782min with 3 transfer along the way, last section is Shinkansen Komachi which you will need to reserve seat. You will reach Tokyo at 22:04.
If your families (kids), do not mind 5-10hours train ride, then sure there is no problem with using train for the trip. There are also Night train available but it will not be covered entirely by JR pass, you will be required to pay for the compartment you reserve for.
