We will be travelling to Takayama from Tokyo on 14/4 and leaving for Osaka on the 15 April.
We are travelling from Australia. Can you book tickets for the train from outside of Japan?
What are the chances trains will book out on these days

You cannot.

The only exception is if you have a JR Pass and you bought it through a local travel agent, your local travel agent if fulfilling certain conditions can make the reservation for you. Not sure of any Australian companies that do so though.

Usually, trains aren't fully packed. Especially Shinkansens.

as for ttrain tickets you would want a JR rail pass, google traveljapan au they have the best rates
ive been there before it was a lovely 2 hour train ride from Nagoya it wasn't that packed at all and they do run often so i wouldn't say they would sell out on tickets, while your in takayama be sure to check out center4 hamburgers you wont regret it! hope ive helped some

As those dates are festival dates, book as soon as you get to Japan. While the trains are not always full, the reserved seats do sell-out, especially on the return legs when everyone checks-out and wants the same train back to Nagoya.

Two other less ideal options for you:
a) Travel to Toyama and get the Hida Express from the other side.
b) Take a local train - slower an all stops, but there are a few extra that will get you to Takayama (but you can't reserve seats) - I was reading the timetable at the station this week - just because it was something useful to know.
