Lately I've been texting with one of my friends frequently. Because of some topic, she kinda sounded like an old lady so I jokingly called her おばあさん. She called me おじいちゃん in return.

I was wondering if ちゃん means familiarity and closeness as compared to さん? And is it fine if I switch to おばあちゃん the next time if I want to tease her?

"chan" can be used to someone very close to you(family members, or very close friends).

"san" can be used more polite and formal way to someone other than "chan"(neighbours, colleagues, school friends you don' know so much).

Girls/ladies often call "おじさん" or "おじいちゃん" to boys/men friends because they think you are a close friend, but, I would advice you not to use "おばさん" or "おばあちゃん" to girls/ladies friends for your safety.....
"おばさん" or "おばあちゃん" sound more elderly way, other than the meaning of closer friendship.

Also "-chan" makes person(not only for real human) cute/lovely as charactor or mascot.
If dog called "wan-chan/ワンちゃん". (ワンワン = bow-wow)
If cat called "neko-chan/ネコちゃん".
