We wish to do a number of traditional things such as ekite makingf, egeisha dressing upf and also we understand you can dress in esumof attire in Nara. A number of these things suggest you book up to 5 days in advance, including entrance to the Gold Temple.

Could you please advise if this is necessary at the time of the year we are travelling (early December) and if so how we go about it?

The Golden Temple (I assume you mean Kinkakuji) does not require advance reservations. For all the other activities, it depends on the policy of the specific business. Some might accept people on the day without reservations, others might require advance reservations because some preparatory work is involved. I recommend to inquire with each business if you are not sure.
