Unfortunately, a 7 hour layover is not enough time to go to Kamakura and back.

Nevertheless, I explain transportation there:

There are hourly, direct trains along the JR Sobu/Yokosuka Line between Narita Airport and Kamakura, however, they are slow (2.5 hours one way).

A faster way is to take the Narita Express to Yokohama and then the Yokosuka Line (or some trains along the Shonan-Shinjuku Line) to Kamakura. It still takes two hours one way, though.

From Kamakura Station, you will still need to take a short ride on the Enoden Railway to reach the Great Buddha (see under "how to get there"):

At least a 9 hour layover is needed in order to visit the Great Buddha. And even then, you would be spending just a few minutes at the Buddha and hours on board of trains.
