Coeliac disease and finding gluten free food

We will be travelling through Japan with 4 children including one who has coeliac disease. Her reaction to even a trace of gluten is serious (relentless violent vomiting for hours). Are we able to bring bread, rice biscuits and tins of tuna from home to have for times when we struggle to find appropriate food for her? Does anyone have any advice regarding finding appropriate food? We are happy to purchase food to take everywhere with us rather than expecting to be able to find meals as we explore. We will be visiting Tokyo, Matsumoto, Hiroshima and Kyoto. Thank you.
