If you are into kitchen knives, there is an excellent (in my opinion) called Aritsugu in the market :

My favorites are Daiyasu oyster bar (125) at the west end of the market, Uchida Pickles shop (109), Houkyouan (89) and Aritsugu (5). I have a few of their knives and they are very good steel and reasonably priced. Just note that their regular steel is high carbon so it stains and rusts easily. I'd consider getting the stainless models if you are not too particular with your knife care.
