Does anyone know of very good and famous specialist shops selling soy sauce or miso paste in :
- Kyoto
- Osaka
- Tokyo ?

What do you want to buy? Or just want to take photos of the shops? What is the criteria when you say 'good'? Expensive? Rare or the list of items for sale?

This can be a good miso shop in Tokyo...but can you tell the difference of the tasts.

Thank you v m for the link.

Not for photo shots, but literally for the products itself - miso paste and soy sauce (separate shops as I doubt any one store is good & popular for both ?).
Good but not overly expensive.

I probably cannot tell the difference, but my mum will be able to !

Presumably the miso shop that you recommended only has a store in Asakusa and no where else ?

I have always wanted to buy some excellent soy sauce to bring back home.
Am sure Kyoto has some good stores, but don't know which one and where.

OK, I get your point. Actually, I can't tell much about the miso either as it is nothing more than we just ramdomly pick one in the nearby supermarket when we want to buy it.

But at least, there are two major sorts. One is shiro (white) miso and the other is aka (reddish) miso. Differences are mainly from the aging period. Shiro is shorter aging and sweeter while aka is longer, richer and more salty. I guess my wife is using shiro for miso soup no matter what brand.

Other classification is like, Rice miso (mixture of soy beans and rice), Buck miso and Bean miso. Rice miso is the common one. Never tased the buck or the bean(100%?).

Of course, there are more sorts of miso, but I can't explain them well. The link I gave you was just for a shop in Tokyo.

Now, here is another link, that is for Kyoto. They are selling saikyo miso...sort of Kyoto special shiro miso that uses more malted rice with less salt.

Daimaru Department Store in Kyoto has a good selection of miso, maybe a dozen different types from around Japan: http://www.bento.com/phgal-depa2.html (scroll down to the bottom for a photo of their selection).

Generally upscale department-store food floors are one of the most convenient places to shop for things like good soy sauce and miso.

Wonder if there is a soy sauce shop in the same league :)

Miso Paste shops 2014/4/6 19:55
Hello.
Am going to Japan next month and was wondering if anyone knows of very good miso shops in :
- Toyama city
- Kanazawa
- Wakura onsen / Nanao (Noto peninsula)
- Tokyo ?

(I went to Honda Miso in Kyoto last year and the miso was wonderful !)
